Servings: 6
Yield: 24 egg bites
Serving size: 4 egg bites
Ingredients
- 8 oz turkey bacon, finely chopped (227 g)
- ½ tbsp butter (7 g)
- 16 large eggs
- 1½ cups almond milk (360 ml)
- 1 tsp salt (6 g)
- ½ tsp ground black pepper (1 g)
- 2 tbsp dried or fresh chives, finely chopped (about 2–6 g, depending on type)
Directions
- Preheat the oven to 300°F (150°C). Line a 13 × 9-inch (33 × 23 cm) baking dish with parchment paper, leaving enough overhang on the sides to lift out the cooked eggs. Place the dish inside a larger roasting pan.
- Pour hot tap water into the roasting pan until it reaches about 1 inch (2.5 cm) up the outside of the baking dish.
- Melt the butter in a large skillet over medium-high heat. Add the chopped turkey bacon and cook until crispy. Set aside.
- Crack the eggs into a large bowl. Add the almond milk, salt, and black pepper. Blend with an immersion blender until smooth. If whisking by hand, whisk thoroughly and strain the mixture through a sieve for a smoother texture.
- Pour the egg mixture into the prepared baking dish. Sprinkle the crispy turkey bacon and chives evenly over the top.
- Cover the dish tightly with aluminum foil. Carefully transfer the roasting pan to the oven and bake for approximately 1 hour, or until the eggs are set in the center.
- Remove the baking dish from the water bath and allow the eggs to cool slightly. Use the parchment paper overhang to lift them out, then cut into 24 equal squares.
- Divide into 6 servings, with 4 egg bites per serving.
Tips
- Save time: Use precooked turkey bacon or chopped deli turkey.
- Individual portions: Divide the mixture among greased muffin cups and bake at 300°F (150°C) for approximately 35–40 minutes, or until set.
- Alternative topping: Serve with a dollop of sour cream and extra chives.
- Variation: Replace the turkey bacon with smoked salmon for a different flavor.
Storage and Reheating
- Refrigeration: Store in an airtight container in the refrigerator for up to 5 days.
- Reheating: Enjoy cold or microwave for about 30 seconds, checking that the center is heated through.
