# Fluffy Cottage Cheese Cloud Bread (0.5g net carbs)

There’s something so satisfying about pulling a fresh batch of these golden little bread rounds from the oven. They come out delicate and slightly crisp at first, but after resting overnight, they transform into soft, fluffy slices that are perfect for sandwiches or stacking up with your favorite fillings. 🤍

With just a few simple ingredients, this cloud bread is such a clever low-carb alternative when you’re craving something bready. And that soft, airy texture makes it surprisingly easy to forget you’re eating keto-friendly bread! 😋

**Servings:** 10 rounds

### Ingredients

- 1 cup 4% cottage cheese (225 g)
- 3 large eggs (150 g), separated
- ¼ tsp cream of tartar (1 g), optional
- ¼ tsp keto sweetener (such as monk fruit, erythritol, or a monk fruit-erythritol blend), optional

### Directions

1. Preheat the oven to **300°F (150°C)**. Line a baking sheet with parchment paper. If the cottage cheese is chunky, blend it with an immersion blender or food processor until smooth.
2. In a small bowl, whisk together the egg yolks and blended cottage cheese. Stir in the sweetener if using.
3. In a separate clean bowl, beat the egg whites with the cream of tartar until stiff peaks form.
4. Gently fold the cottage cheese mixture into the whipped egg whites. Mix just until combined, taking care not to deflate the whites.
5. Spoon the mixture onto the prepared baking sheet to make **10 rounds**, using approximately **⅓ cup (80 ml)** of batter per round. Shape each into a circle roughly **5 inches (13 cm) wide and ¾ inch (2 cm) thick**.
6. Bake for about **30 minutes**, or until the rounds are golden brown and set. If using two baking sheets, rotate their positions halfway through baking. Alternatively, bake in two batches.
7. Remove from the oven and let the rounds cool completely. They will initially be crisp and somewhat crumbly, but they soften after resting overnight in a sealed plastic bag.
8. Once softened, use the cloud bread for sandwiches, burgers, or mini wraps.
