Ingredients
- 1 cup 4% cottage cheese (225 g)
- 3 large eggs (150 g), separated
- ¼ tsp cream of tartar (1 g), optional
- ¼ tsp keto sweetener (such as monk fruit, erythritol, or a monk fruit-erythritol blend), optional
Directions
- Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper. If the cottage cheese is chunky, blend it with an immersion blender or food processor until smooth.
- In a small bowl, whisk together the egg yolks and blended cottage cheese. Stir in the sweetener if using.
- In a separate clean bowl, beat the egg whites with the cream of tartar until stiff peaks form.
- Gently fold the cottage cheese mixture into the whipped egg whites. Mix just until combined, taking care not to deflate the whites.
- Spoon the mixture onto the prepared baking sheet to make 10 rounds, using approximately ⅓ cup (80 ml) of batter per round. Shape each into a circle roughly 5 inches (13 cm) wide and ¾ inch (2 cm) thick.
- Bake for about 30 minutes, or until the rounds are golden brown and set. If using two baking sheets, rotate their positions halfway through baking. Alternatively, bake in two batches.
- Remove from the oven and let the rounds cool completely. They will initially be crisp and somewhat crumbly, but they soften after resting overnight in a sealed plastic bag.
- Once softened, use the cloud bread for sandwiches, burgers, or mini wraps.
