Cheesecake that actually fits into your day! 🍰🤍

I wanted a dessert that felt like a real treat but could also bring a little extra protein to the table, and this mini cheesecake turned out to be such a good find. It’s creamy, smooth, and satisfying without feeling as heavy as a traditional cheesecake.

With 10g of protein and just 3g of carbs per slice, this high-protein keto cheesecake is an easy little dessert when you want something sweet without going overboard. Add some berries or a little whipped cream on top, and it’s even better. 🍓

**Servings:** 4

## Ingredients

- 1 cup cottage cheese (225 g)
- 2 oz full-fat cream cheese (57 g)
- 2 oz sour cream (57 g)
- 1–2 tsp liquid monk fruit sweetener (5–10 ml), to taste
- Pinch of salt
- 2 large eggs, room temperature (100 g)
- **Optional:** 1 tsp lemon zest (about 2 g)
- **Optional:** 1 tsp lemon juice (5 ml)

### Optional Crust

Use your preferred keto-friendly cheesecake crust if desired.

## Directions

1. **Prepare:** Preheat the oven to 350°F (175°C).
2. **Blend the filling:** Add the cottage cheese, cream cheese, sour cream, monk fruit sweetener, salt, and optional lemon zest and juice to a food processor or high-powered blender. Blend until completely smooth. Taste and adjust the sweetness if needed.
3. **Add the eggs:** Add the eggs and blend just until incorporated.
4. **Fill the pan:** If using a crust, press it into the bottom of a 6-inch springform pan first. Pour the cheesecake filling over the crust. You can also divide the filling between four 6-oz ramekins (about 170 g each).
5. **Bake:** Place the springform pan or ramekins on a small baking sheet. Add a little hot water to the baking sheet to help the cheesecake bake evenly. Bake for 25–30 minutes, until the center is set but still has a slight jiggle.
6. **Chill:** Remove from the oven and refrigerate for 1–2 hours before serving.
7. **Finish:** Top with sugar-free whipped cream, keto caramel sauce, or a few fresh berries if desired.

## Storage

Cover leftovers tightly or store in an airtight container in the refrigerator for up to 7 days.
