# Keto Lo Mein

**Takeout night, but make it low-carb! 🥢🍜**

Chinese takeout was calling, so this lo mein was my answer. I wanted those familiar savory, slightly tangy noodles without the heavy carb load, and this version turned out to be such a satisfying swap. 🤎

The konjac noodles soak up the flavorful sauce beautifully, giving you that classic lo mein experience in a lighter keto-friendly way. It’s savory, slurpy, and seriously comforting. Perfect for those takeout cravings at home! 😋

**Servings:** 6

## Ingredients

- **1 lb konjac noodles (454 g)**
- **⅓ cup coconut aminos (80 ml)** or soy sauce
- **3 tsp unseasoned rice vinegar (15 ml)**
- **¼ tsp lime juice (1.25 ml)**
- **⅓ cup water (80 ml)**
- **2 tsp brown sugar substitute (about 8 g)**
- **2 green onions (about 30 g), thinly sliced**, reserving 1 tbsp (about 5 g) for garnish
- **1 tbsp sesame oil (15 ml)**
- **¼ tsp xanthan gum (about 0.8 g)**

## Directions

1. Place the konjac noodles in a colander and rinse thoroughly under cold water for **1–2 minutes**, following the package directions. Drain well.
2. In a large bowl, whisk together the coconut aminos or soy sauce, rice vinegar, lime juice, water, brown sugar substitute, and all but the reserved green onions.
3. Add the drained noodles and toss well to coat them in the marinade. Cover and refrigerate for at least **3 hours**, or overnight for a deeper flavor.
4. Place a fine-mesh sieve over a large bowl and drain the noodles, reserving the marinade.
5. Heat the sesame oil in a large skillet over medium-high heat. Add the noodles and toss with tongs for **2–3 minutes**, until heated through and slightly dry. The noodles may sizzle or pop, so keep them moving. Transfer to a serving bowl.
6. Reduce the heat to medium and pour the reserved marinade into the skillet. Once it begins to bubble, sprinkle the xanthan gum evenly over the surface while whisking continuously. Cook for **1–2 minutes**, until thickened.
7. Pour the sauce over the noodles and garnish with the reserved green onions. Serve hot.
