Keto Peanut Butter Mug Cake
The perfect little dessert when a peanut butter craving hits!
There are evenings when making a whole dessert just feels like too much, so this mug cake is exactly the kind of recipe I reach for. A few minutes is all it takes to turn that peanut butter craving into a warm, fluffy treat, and I love adding a little chocolate for an extra indulgent touch. 🤎
It’s soft, moist, and packed with peanut butter flavor, while still keeping things low-carb. Best of all, you can go from craving to dessert in about four minutes. Just grab a mug and enjoy! 😋
Servings: 2
Ingredients
- 2 tbsp peanut butter (32 g), softened
- 1½ tbsp coconut flour (10 g)
- 1½ tbsp powdered keto sweetener (12 g), plus an additional ½ tsp (about 2 g) if you prefer it sweeter
- 3 tbsp heavy cream (45 ml) or coconut cream for a dairy-free option
- 1 medium egg (about 44 g)
- ¼ tsp baking powder (1 g)
- 1 tbsp dark chocolate, chopped (about 10 g) or sugar-free chocolate chips, optional
Directions
- Add the peanut butter, coconut flour, powdered sweetener, cream, egg, and baking powder to a tall microwave-safe mug or glass. Mix thoroughly with a fork until the batter is smooth.
- Fold in the chopped chocolate or sugar-free chocolate chips, if using.
- Microwave on high for up to 90 seconds. Start checking at 50 seconds, then continue in 10-second intervals until the cake has pulled away from the sides and the center is cooked through.
- Let it rest briefly, then enjoy warm.
Notes
- Use softened peanut butter so it blends easily into the batter. Almond butter can also be used.
- You can divide the batter between 2 small ramekins if preferred; the cooking time may need to be adjusted.
- For extra flavor, add ½ tsp vanilla extract (2.5 ml) or 1 tsp cinnamon (about 3 g).
- Top with whipped cream or coconut cream and a few chocolate chips if desired. These optional decorations are not included in the nutrition information.
- This mug cake is best enjoyed warm.
