A Reuben craving is not something I take lightly! 🥪🧀

There are some sandwiches that are so good, you don’t want to give them up just because you’re eating keto. The Reuben is definitely one of them, so this version had to have that same satisfying combination of savory, tangy, cheesy goodness just without the traditional bread. 🤎

The crisp, buttery chaffle gives this sandwich the perfect bite, while the warm corned beef, melted Swiss, sauerkraut, and creamy sauce bring everything together. It’s a seriously satisfying low-carb lunch that tastes like the real deal.

**Servings:** 2 sandwiches

## Ingredients

### Reuben Sauce

- 3 tbsp mayonnaise (45 g)
- 1 tbsp keto-friendly ketchup (15 g)
- 2 tbsp minced dill pickles (about 20 g)

### Sandwiches

- 4 chaffles, prepared with 1 tsp crushed caraway seeds (about 2 g) added to the batter
- ¼ lb thinly sliced corned beef (113 g)
- 1 cup sauerkraut (about 150 g), drained
- 2 oz Swiss cheese (57 g), sliced or shredded
- 2 tbsp butter (28 g)

## Directions

1. In a small bowl, stir together the mayonnaise, keto ketchup, and minced dill pickles until well combined.
2. Spread the sauce over one side of each chaffle.
3. Divide the corned beef between **2 of the chaffles**.
4. Add half of the Swiss cheese and half of the sauerkraut to each sandwich.
5. Place the remaining chaffles on top, with the sauce-coated side facing down.
6. Melt the butter in a large skillet over medium heat.
7. Carefully place the sandwiches in the skillet and cook for about **4 minutes**. Flip and cook for another **4 minutes**, or until the chaffles are golden and the cheese has melted.
8. Serve warm.
